Must. Have. Bacon.

So I've pretty much been on the bacon kick ever since going "paleo".  Now before you say anything about blood pressure, cholesterol, and fat and all of that, let me tell you I've been to my doctor, got some blood work done, and found that my levels in all those areas are pretty darn good.  I'll get it checked out in a couple of years again to see how my body is doing.

That being said, today's pin is all about bacon.  Bacon, cheese, and eggs.  Now how can you go wrong with that?

Of course we all know that individually, they all are fantastic on their own, but what happens when their powers combine?  Traditionally, I've combined those three super powers into the following:

But this pin from Pinterest got me thinking, well, inside the box.  (The oven, that is.)

Ingredients are simple:
- bacon (I used thick cut)
My ingredients
- 12 eggs
- cheese

Seriously, how can you go wrong with that???

So combine as the picture shows, stick in a 350 degree oven for 35-40 min, and voila, you got your self some Mini Bacon Egg Cups.





Okay, so simple enough.  I got my ingredients and lined my muffin tin with bacon.  (Was totally drooling at this point.)  Whipped up a dozen eggs and plopped in some shredded cheese into the mix.



Wasn't quite sure how much egg to put in each cup, so I pretty much filled it up with a 1/4 inch or so to go on top.

 
Snuck a peek right before the 30 minute mark.


At 30 minutes, I took the wonderfully smelling, bacon fat bubbling, incredibly fluffy concoction out of the oven.  This is what it looked like.  Absolutely awesomeness.

However, when I tried to take it out, it was kind of stuck on the bottom and the bacon was not quite as done as I wanted it to be. So I popped it back in the oven for another 10 minutes.

Unfortunately, the eggs got a little over done.  The bacon, however was perfect.  Definitely thinking of how to tweak this for next time.

 Without delay, I served this up to my hungry munchkins.  (Well, two of them got this. The little one got the omelet shown above.) They totally loved it.

Well, duh!  What's not to love?!

Overall, I give this dish 4 out of 5 stars.  The only reason for deducting half a point was the unevenness of the bacon/egg cooking, and the goodies stuck to the bottom of the pan - which I still scraped off an ate anyway!

Definitely a repeat event!!  Enjoy!


Notes to self for next time: Start off with the bacon first for about 10 minutes, and then add the egg/cheese mixture.  Also, don't rely on the bacon grease to drip down in the center of the pan.  Maybe it will with the pre-cooking, but I'd rub the bacon around on the insides of the muffin tin before putting it in its place.  Also, I ended up with extra egg mixture. (Made the bacon egg omelet with the left overs.)  Could probably cut back on an egg or two.
